My dream of having shelves have finally come to fruition. I can put plates somewhere other than our small counter top. Check out our Goodwill finds: the red “le Creuset” pot - $5, the all-clad panini pan $5, and our hand mixer $3. Thanks again Jaren and Patrick for our Kitchen Aid mini food processor! We use it at least 2 times a week. No more crying from chopping onions the traditional way. Tonight we made fish and chips using Jamie Oliver’s beer batter. Joseph also threw in some “willy’s” or fried pickles. We had them at a restaurant off Colfax and decided it would be a good idea to try them ourselves. I’m sure David can recall these! Last night Joseph made enchiladas. I have been eating well the last few weeks. Joseph has some time off before school starts up in May. I kind of like have a personal chef! I usually have breakfast, lunch, and dinner prepared for me. We made pasta salad from Avoca’s cookbook (from Ireland) for snickety snacks at work (every Friday we meet in a different office for a little “party” during lunch time). At least the kitchen is getting used frequently. I’ll post the pictures when I am not so comfy on the couch
On a non-culinary note, I have been delving into the YouTube world. Sheepdog competitions, Celebrity Jigs and Reels, Francesco’s Italy Top to Toe, Top Gear, The F Word, 1980’s Irish Dancing, Otters Holding Hands, Joseph’s Jr. High Graduation, Rabbit Show Jumping, and Chris Rock are among the many favorite videos I have been collecting.
